Simple Vegetable Soup

I modified multiple simple veggie soups to come up with this one! Nothing beats a good brothy vegetable soup and I love that you can use this as a base and throw in any other vegetables you might have in your fridge or freezer.

Ingredients

  • 3 stalks of celery, chopped

  • 3 carrots, chopped

  • 1 yellow onion, chopped

  • 2-3 cloves of garlic, minced

  • 1 teaspoon dried thyme

  • 1 teaspoon dried parsley

  • 2 tablespoons tomato paste

  • 1 - 15 oz can beans

  • 48 oz broth (you can do just 32 oz, but I liked a lot of broth!)

  • Any other veggies you want to add – I’ve added frozen corn, spinach etc.

Instructions

  1. Chop onions, carrots and celery and add to pot with minced garlic.

  2. Rinse beans and add to pot.

  3. Add broth, tomato paste and spices and turn on medium heat.

  4. Cook until vegetables are soft.
